Simple Oatmeal Cookies

These delicious vegan cookies are made in no time - out of ingredients you're sure to find on your breakfast shelf. You don't even need a blender to make them, just a fork and a bowl will do. Enjoy!


Ingredients:


5 tbsp oatmeal

1 tbsp trail mix

1 tsp flaxseeds

3 dates

1 tbsp apple puree

1 tbsp peanut butter

1 tsp cinnamon

A speeze of lemon juice


Preparation:


Cut dates into small pieces and mash with a fork together with the lemon juice, cinnamon and peanut butter. Add apple puree and flaxseeds. Add as much oatmeal and nuts until you have a sticky consistency that is easy to form into balls in your hand.


Form flat balls and put them on the baking sheet. Bake in the oven at 170 degrees celcius for 20 minutes until the nuts are light golden brown.


The cookies are nice treat when they are still warm, garnished with a little bit of yogurt and fresh berries. Of course, they are a nice snack anytime, for instance for a picnic with friends or for a coffee break.
